Half Time Quesadillas
1 T. Vegetable Oil
½ C. Water
1 lb. Boneless skinless chicken breast, cut into thin strips
1 small onion, thinly sliced
1 pkg. Hot & Spicy Mexican Dip Mix (or Chipotle Ranch)
8 flour tortillas (8-inch)
2 C. shredded Cheddar or Monterey Jack cheese
Heat oil in large nonstick skillet on med-high heat. Add chicken and onions; cook and stir 7 minutes. Stir in seasoning mix and water. Bring to boil. Reduce heat to low; cook and stir 3 minutes or until chick is cooked through.
Spread about ¾ C chicken mixture on each of 4 tortillas. Sprinkle evenly with cheese. Cover each with a second tortilla.
Spray a clean skillet with non stick cooking spray. Cook quesadillas, 1 at a time, on medium heat 4 minutes or until golden and cheese is melted, turning once. Cut into wedges. Serve with assorted toppings, if desired.
