Tasty New Recipe

Half Time Quesadillas
1 T. Vegetable Oil
½ C. Water
1 lb. Boneless skinless chicken breast, cut into thin strips
1 small onion, thinly sliced
1 pkg. Hot & Spicy Mexican Dip Mix (or Chipotle Ranch)
8 flour tortillas (8-inch)
2 C. shredded Cheddar or Monterey Jack cheese

Heat oil in large nonstick skillet on med-high heat. Add chicken and onions; cook and stir 7 minutes. Stir in seasoning mix and water. Bring to boil. Reduce heat to low; cook and stir 3 minutes or until chick is cooked through.

Spread about ¾ C chicken mixture on each of 4 tortillas. Sprinkle evenly with cheese. Cover each with a second tortilla.
Spray a clean skillet with non stick cooking spray. Cook quesadillas, 1 at a time, on medium heat 4 minutes or until golden and cheese is melted, turning once. Cut into wedges. Serve with assorted toppings, if desired.

Creating New Flavors

Now that the holidays are finished and everything is cleaned up, it's time to get creative again. We are taking this time to create new dip mixes for our spring/summer weather. We would love to hear from you with what type of dip mixes you would like to see this next year.

We currently are testing some new ingredients for a "sugar free" line. I am still working on the exact recipes, but hopefully everything will be approved by the R&D department and ready for packaging by March.
